Recipe is from Nina from Catatan Nina
What you need:
(with a little modification)
500g egg noodles - cook as instructed
enough lettuce
1 tbsp chicken oil
1 tbsp fish sauce
1 tsp sesame oil
For the chicken:
500g minced chicken
3 cloves of garlic, minced
2cm of ginger, grated
1 tbsp oyster sauce
1 tsp sesame oil
1 tsp sugar
2 tsp salt
1/2 tsp pepper
2 tbsp fried garlic
2 tbsp cooking oil
For the soup:
carcass from 1 chicken
about 3 litre of water
5 cloves of garlic, lightly pounded
3 tsp salt
1 tsp sugar
Garnish:
enough lettuce
enough fried onion
enough chopped spring onion
beef balls
fried wonton skin
mixed vegetables pickled
Method:
Chicken:
- Heat oil and sautee garlic and ginger. Add in chicken and cook til change color
- Add in oyster sauce, sesame oil, salt, sugar and pepper. Cook til a little dry. Set aside
- Mix the chicken with fried garlic and grind just for a while
- Bring water and chicken carcass to boil and simmer for 2 hours over low fire
- Strain and discard the chicken carcass
- Add in the strained stock with garlic, salt and sugar, bring to boil over low heat
- Ready to use
Mix the cooked noodle with chicken oil, sesame oil and fish sauce
Arrange lettuce on a serving bowl and place noodle on top
Add in chicken on the noodle, sprinkle with fried onion and spring onion
Add in beef balls, fried wonton skin and pickle
Serve with soup at the side and chilli sauce as preferred
